The Secret Life of Beets


Beets may as well be my favorite unique vegetable.  They are mostly overlooked at the market, due to their more expensive prices compared to an average bag of carrots or celery.  Their beautiful crimson color and sugary taste, however, puts them at the top of my list.  Beets and beet greens were a staple of my childhood diet, my mother shared the same affinity for them as I.  Only recently did I discover the various ways in which one can use beets to create burgers and desserts on top of a multitude of other unique recipes.  Beets are savory and sweet, making their uses versatile.
