Portobello Pizza with spinach, egg, & cheese
-1 Portobello Mushroom, remove stem
-3 tbsp. pizza sauce
-handful of spinach
-1 egg
-shredded cheese
-basil & oregano
Layer ingredients on top of each other.  Carefully crack the egg on top in order to avoid spillage.  Place the pizza on a baking sheet lined with aluminum foil because the sauce will most likely bubble over.  375 degrees for 17 minutes should do the trick.  The portobello has a delicious meaty texture and, all together, the ingredients emulate a pizza quite well.  This is perfect, healthy substitute for all your conscious omnivores and vegetarians.
