#8 THE LEAN GREEN OMELET MACHINE

Omelet vs. omelette?  We’re in America people, we go big or go home.  This big boy is one monstrous omelet, filled with healthy goodies that are sure to satisfy any salty or savory dinner craving.  Of couse, omelets can be enjoyed at any time of the day.  I usually crave eggs, cheese, and veggies after I work out, so this recipe is perfect for those who just hit the gym.  You cannot forget to refuel your body and brain in order to start that 10 page paper due tomorrow at 8 am.  Eggs are a fantastic source of protein and low in calories (= supermodel / muscle head food.)

I used one whole egg, and 2-3 egg whites.  I’ve learned from experience that larger proportions of egg whites to egg yolks cook faster, you can see that my omelet is bubbling (this is normal, I promise it won’t explode).  The filling consists of asparagus, broccoli (from the salad bar, I had to steam it myself on the grill), feta cheese (also from the salad bar: a rarity) and raisins.  I will add raisins to practically anything, but I understand this might disgust the majority of people.  Feel free to add anything, but make sure you load up on vegetables.  

I overestimated the amount of filling I would need, thus my omelet transformed into a “burrito-esq, incomplete omelet-like” creation.  Don’t worry, it all ends up in the same place.  I think it looks more gourmet this way anyway.

p.s. I saw a funny quote in the admissions building today: “I wanted to start eating healthy and grow my own food, but I couldn’t find twinkie seeds?”  What a pity.
